Food cost % = plate cost ÷ menu price (net of VAT). To hit a target:
Net price (ex-VAT) = plate cost ÷ target food-cost%
Menu price (incl. 18% VAT) = net price × 1.18
Worked example:
Plate cost €2.40, target food cost 30%. Net price = 2.40 ÷ 0.30 = €8.00 ex-VAT Menu price = 8.00 × 1.18 = €9.44 incl. VAT → round to €9.50. Gross margin per dish = 8.00 − 2.40 = €5.60 (70% of net).
Always show both the ex-VAT number (what the kitchen P&L runs on) and the VAT-inclusive menu price (what the diner pays). Restaurant sales carry 18% VAT in Kosovo.
Typical full-service food-cost targets sit around 28–35%; bar/drinks run lower (high margin). These are planning benchmarks — the owner's rent, labour, and local pricing decide the real target.
Given a list of dishes with cost, price, and rough monthly sales count, classify by margin (high/low) × popularity (high/low):
